As Sultan Mehmed II organized his military expeditions to create a centralized state that controlled “the Two Lands and the Two Seas,” one of his other main concerns was to develop Istanbul into a metropolitan city that was in keeping with this empire and which was truly a capital city.

As is well known, Istanbul has a history that stretches back in time and a culture that has been nourished by a variety of sources.

Despite the fact that Istanbul cuisine was a mixture of culinary traditions from almost all parts of the empire, it would be wrong to claim that it represented the eating habits of the whole imperial geography.

In Istanbul, gardens, yards, and orchards occupied an important place in the Roman and Byzantine cultures; this continued during the Ottoman era.
